Today Ive been super busy batch cooking food to fill my freezer drawer of homecooked meals for when I dont have time to cook. As you can see lots of slimming world friendly foods on this table.
For this you will need.
1 big red chilli deseeded and finely chopped
1 large onion finely diced
2 garlic cloves crushed
2/3 mushrooms sliced
200ml Vegetable stock
Salt and pepper to taste
1 tbsp of Worcestershire Sauce
(If you want to add any extra superfree to this sauce you can. I would stick with Italian style veg such as toms, mushrooms, peppers and Courgettes?)
First spray your pan with frylight and add your onion, garlic, chilli and veg to the pan.
Fry until softened.
Once they are soft, add all your other ingredients to the pan except the salt and pepper. Stir through, bring to a boil and then reduce to a simmer and cover for 20 mins.
Thats it. Now season with salt and pepper, then put either straight onto your pasta or pack up in the fridge or like me put into pour and store bags like so.
Once cool, seal the back almost to the end, lay carefully on its side and fatten until the sauce reaches the gap you left and then quickly seal. This way you can freeze flat and save storage in the freezer.

This recipe I shared into 3 bags which I would serve as either for 2 people. So 3 meals for 2 or you could batch it up smaller if you needed to.
