Well I had a bit of a moment today and thought I should really get off my mardy bum and do something productive.
So far I have managed to put alot of my old items of clothing on E-bay mainly dresses that are just too big now thanks to slimming world.

I also decided to post a recipe.
This is the first time I have made these, but I’m told they are fabulous for pack ups and picnics, and also freezing which would be great for us as I’m getting a little fedup with salads.
So I thought Id try some of these magic slimming world quiches our leader is always raving about. Well now I can totally see why.
So here is what you are going to need
- frylight
- muffin pan
- 1 onion diced
- a few mushrooms thinly sliced
- ham or cooked bacon chopped into pieces
- 4 eggs
- fat free cottage cheese
- chives either fresh or dried
- salt and pepper to season
- sliced tomato for the top
So to start of you are gonna fry your onion and mushrooms in a frying pan with some of the frylight until they are soft.
Once your happy with the colour, go ahead and spray that pan. Now share the onions and mushrooms between each little cup like so.
Now add some chopped ham between your little pots, or bacon if you have that. Make sure its nice and lean.
In a jug add your eggs, cottage cheese, a teaspoon of chives and salt and pepper to season. Now whisk it baby till its all mixed up.
Share this between each little pudding space and then top with a slice of tomato, or don’t if you don’t like tomato.
Bake in the centre of a preheated oven for approx 20-25 mins. Approx gas mark 5 or 6. But please check often after the first 15 minutes you want them to be firm and not wobbly with a bit of colour to the tops. Like these ones I made earlier…….(blue peter moment.
Allow to cool in the pan for ten minutes then gently remove from the pan and put onto a wire rack to cool completely. If you are lucky you will have some left to go in the fridge for work the next day.
I have only 8 left now. I cant see them making it to the freezer.
Very yummy indeed they are. Of course you could add other bits to these, like peppers, or maybe chicken? who know go mad and come up with your own flavors. Best of all they are free so go nuts. xx
I also didn’t mention but these are super cheap to make. They aren’t going to break the bank and would be a great addition to a picnic or instead of sandwiches for lunch.
