So the other night we made this bad boy, the amazing Slimming World Curry from the Slimming world plan.It certainly hits the curry spot and is super tasty and easy to make, simply gather all the ingredients below.
- 400ml chicken stock
- 2 tbsp soy sauce
- 4 tbsp tomato puree
- 2 tbsp cider vinegar
- 1/4 tsp sweetener
- 2 tbsp meduim curry powder ( or mild if you dont like it hot)
- 1 level tbsp cornflour
- cooking spray
- 2 chicken breast fillets cut into strips
- 1 yellow pepper and 1 green pepper chopped into slices
- 1 tsp ground ginger
- 2 red onions cut into quarters
In a large bowl whisk the stock, soy sauce, tomato puree, vinegar, sweetener, curry powder and cornflour. Put to one side until later
You can use more chicken if you like in your curry but i find if you cut the chicken up into thin strips it goes alot further and costs alot less to make.
This made enough for 4 and some spare
Spray a pan with frylight and start by cooking the chicken until its cooked through. Then transfer to a plate and keep warm.
Wipe your pan clean and re spray with frylight. Now you can stirfry your peppers, onions and ginger powder.
Stir fry for a few minutes, and then add the stock mixture and chicken back to the pan, cover and cook until the sauce is thickened and your veg is cooked through.
Once its cooked its time to serve with some nice rice or slimming world chips. Whichever you fancy.
I personally love mine with rice.
It also tastes great next day, as ive took it too work as my packed lunch a few times.
